Easy, Springtime, Mini Quiches (crustless)

With the spring equinox coming, we celebrate the birth of the Earth. One of the symbols of birth and rebirth is the egg. Try these easy, mini quiches to celebrate the return of life, as animals and plants emerge from the slumber of winter. Serve at a coven event, or enjoy with family.


  • 8 eggs

  • 1/2 cup of whole milk

  • 1/4 cup of shredded mozzarella cheese

  • 1/4 cup of spinach

  • 1/2 lb of bacon (optional)

  • One muffin pan

  • Muffin pan liners or wax paper squares


  • Preheat oven to 350 degrees

  • In a medium mixing bowl, crack 8 eggs, and whisk together.

  • Add 1/2 cup of whole milk, and whisk in with eggs.

  • Measure out 1/4 cup of spinach and add to egg and milk mixture.

  • Measure out 1/4 cup of mozzarella cheese and add to egg and milk mixture.

  • Optional: Cut up 1/2 lb of bacon into small pieces. Add to mixture.

  • Line muffin pan with liners or wax paper squares.

  • Evenly distribute mixture into muffin pan.

  • Bake in oven for 25-30 minutes.

  • Serve, and enjoy!
